BAKED CHICKEN & EGG NOODLE DINNER FOR 4 FOR $10

Talk about easy to cook, melt in your mouth good and affordable, that’s a triple BAM, POW KABOOM!  This is a recipe passed down from my Mama, it is amazing how this woman has these really simple recipes that are so addictive!  I am so thankful to have my Mama!  This is the kinda meal that taste good the night of and even better as left overs (lunch or dinner)!  Can you say marinate in the goodness?!?!  WHEW!!!!  Did I mention the egg noodles means this is a low carb meal?!?!!  And for $10 (about $7 for the chicken thighs and about $2.50 for the egg noodles) you really have no reason not to try it!  I say this meal is for 4, however, we almost always have left overs!

BAKED CHICKEN & EGG NOODLE DINNER FOR 4 FOR $10

INGREDIENTS:

8 chicken thighs
1 12 oz. bag of extra wide egg noodles
2-4 tbsp. rotisserie seasoning (+ 1 tbsp. after chicken is flipped)
1-2 tsp. ground black pepper
1 tbsp. sea salt (+ 1 tbsp. for noodles)
1 tbsp. granulated garlic (for noodles)
2 tbsp. unsalted butter

READY, SET GO:

  1. Pre-heat oven to 400 degrees
  2. Clean chicken thighs
  3. Season chicken with rotisserie seasoning, sea salt and ground black pepper on both sides
  4. Place chicken in a baking dish or aluminum pan skin side down and cook uncovered in oven for 30 minutes
  5. While chicken is in the oven, cook the egg noodles as directed on the bag, after draining noodles add butter and season with sea salt and granulated garlic
  6. After 30 minutes flip chicken skin side up, add additional rotisserie seasoning on top and cook uncovered for an additional 20 minutes
  7. After chicken is done, remove chicken from the pan and set aside, add noodles to pan with chicken drippings and stir noodles gently to incorporate with the chicken drippings
  8. Add chicken on top of noodles and cook for an additional 5-10 minutes uncovered
  9. I TOLD YA IT WAS EASY!  INDULGE AND ENJOY!

I always fail miserably cooking chicken thighs (it always seems to take forever to get done). So, with the cooking steps you listed, the chicken will be cooked through in about an hour?

It is possible your oven temp could be different from mine, however, yes, my chicken thighs are always done in about an hour. Let me know how yours turn out.

I dont think they sell it where i live. I looked in two stores and was told it is a seasonal item. I tried mixing some seasonings together, wish me luck!
