This black bean salad is fresh and delicious. My daughter said it reminded her of something that would come out of the Chipolte kitchen as she filled her plate with seconds. It can be a light side, after workout meal, or over rice. Either way you will not be disappointed; the flavors are bold!
INGREDIENTS:
1 can black beans, rinsed
1 can whole kernel corn, drained
1 red bell pepper, diced
1 cucumber, sliced and cut into quarters
1 half medium red onion, diced
¼ cup fresh cilantro, diced
¼ cup lime juice
2-4 teaspoons sea salt
1-2 teaspoons ground black pepper
Optional – lime wedges
READ, SET, GO:
- Add all ingredients to a big bowl and gently fold together, refrigerate a minimum of 15-20
- Optional garnish each serving with a lime wedge for that extra squeeze
*This recipe is 6-8 servings
*Serve as a light side, a mid-day snack, an after workout meal or over rice

I made my ❤ the black bean summer salad and he loved it. He did ask to put it over rice the next time but he still enjoyed it as well as said how refreshing it was😊. Also, today I made the curry salmon again but this time for my dolls (25 & 19) they DEMOLISHED it 😂. I love your recipes and appreciate you for sharing 😘
