SCREAMING OWOOOEEEY GOOOOEY GOODNESS! SOOOOO the restaurant Matchbox used to serve a chocolate banana bread pudding with rum sauce AND THEN with no warning (at least not directly to me LOL) they took it off the menu. For a couple years i kept calling just to see if they added it back! Unfortunately they did not!
So I took matters into my own hands and did what i do best; create in the kitchen! And OMG this chocolate banana bread pudding with rum sauce is EVEN BETTER than the one Matchbox used to serve! I mean it’s hard to explain, you must try for yourself! I promise it will not disappoint!!


Ingredients
- BREAD PUDDING:
- 2 ripe bananas
- 6 beaten eggs
- 1 cup heavy whipping cream
- 1/4 cup granulated sugar
- 2 tbsp vanilla extract
- 1 loaf brioche bread (cubed)
- 2 cups chocolate chips (60% Cacao bittersweet)
- Optional: powdered sugar for dusting
- SAUCE:
- 1 ripe banana sliced
- 1 stick melted butter
- 1/4 dark rum
- 2 tbsp honey
- 2 cups heavy whipping cream
- 1 banana sliced
- 1 tbsp cinnamon
Instructions
- Preheat to 375 degrees
- Lightly coat 9x12 baking pan with softened unsalted butter
- In a small bowl mash 2 ripe bananas until mushy
- In large bowl whisk together the heavy whipping cream, vanilla extract, granulated sugar and eggs
- Fold in mashed bananas to large bowl with mixture
- Fold in cubed brioche bread and chocolate chips
- Pour mixture into coated baking pan and bake uncovered for 30-40 minutes (do not over bake, stick tooth pick or fork in bread pudding, if comes out clean and has golden top; its ready)
- Put pan with bread pudding in fridge to set up at least 30 minutes (i left mine in overnight)
- LET'S MAKE THE SAUCE
- In medium pan melt butter over medium heat, once butter is melted add rum and allow to reduce
- Add honey and stir
- Add heavy whipping cream, continue to cook until reduced, once reduced add banana slices and cinnamon
- POUR ALL OVER BREAD PUDDING or on individual slices AND ENJOY!!
