Crab Eggrolls with Lemon Aioli Dipping Sauce

There is this crab eggroll craze happening. Restaurants have lines around the corner to grab some! And I know why …… BECAUSE THEY ARE FREAKIN DELICIOUS!!! Then add this homemade lemon aioli dipping sauce (FREAKIN YUM) and you literally have a party in your mouth. These crab eggrolls are perfect for any time any even or just that craving for something delicious! The recipe is easy and the reward is great! Enjoy!!!!!!

Ingredients

  • CRAB EGGROLLS
  • seafood seasoning
  • garlic powder
  • onion powder
  • cracked black pepper
  • 3-4 tbsp cilantro
  • 1/4 cup mayo
  • 4-5 tbsp djon mustard
  • 1/2 cup marscapone cheese
  • 2-4 tbsp lemon juice
  • 2 large egg yolks
  • 1 16oz can jumbo lump crab meat
  • 1/2 cup crushed crackers (i used Keebler Townhouse Original but use what you like)
  • Eggroll wrappers (+ 3-4 tbsp water to wet all edges of square of the eggroll wrapper - see detail on video)
  • Canola or Vegetable oil (enough to fill pot quarter way up)
  • LEMON AIOLI DIPPING SAUCE
  • 1/2 cup mayo
  • 3-4 tbsp djon mustard (i used country ground)
  • 2 tbsp crushed garlic
  • 1-2 tsp sea salt
  • 1-2 cracked black pepper
  • 1-2 tbsp cilantro
  • 3-4 tbsp lemon juice
  • 1-2 tbsp granulated sugar

Instructions

LET’S MAKE THE CRAB EGGROLL:

  1. Add seafood seasoning, garlic powder, onion powder, cracked black pepper, cilantro, mayo, dijon mustard, lemon juice, marscarpone cheese, and egg yolks and whisk until fulling blended
  2. Gently fold in lump crab meat and crushed crackers to finalize crab mixture
  3. Lay eggroll wrappers out, lightly wet all 4 edges, place crab mixture in middle (do not over fill), fold two corners in to cover crab mixture, then fold tightly one of the remaining edges over the crab mixture and tightly roll up, when almost rolled wet the last edge to ensure it sticks (for BEST results watch the short video below)
  4. Heat canola or vegetable oil in large sauce pot over medium/high heat (make sure it’s hot before you add eggrolls), add eggrolls in carefully and turn heat down to medium, cook on each side no more than 2-3 minutes (do not overcook) – (watch video for best color results)
  5. Carefully remove from oil and set aside to drain

LET’S MAKE THE LEMON AIOLI DIPPING SAUCE

  1. Add all ingredients to a small bowl and whisk/mix until fully blended
  2. ENJOY, DIP, ENJOY, DIP & ENJOY!!!!!
