New Lunch On-the-Go Recipe

This has now become one of my family’s favorite meals. They want it for dinner and packed the next day for lunch. We used Knorr® Selects Four Cheese Risotto, and man does it have a melt-in-your-mouth texture, plus it’s full of flavor! I also love that it’s nutritious and easy to make – just add Knorr® Selects, a lean protein (like the chicken I added) and your favorite veggies. You just can’t beat that!  

But wait, there is more! This easy-to-use product only took me 20 minutes to cook AND only cost me $10 to feed our family of four (that’s just $2.50 per serving) – talk about a keeper! The first time I made them, my teen son asked, “Mom, can you make these more often?” I said, “Sure, baby!” This is a meal that not only tastes good, but makes my family feel good! 

P.S. – You could make these for the kids in advance for after school meals. Just wrap them in foil and then you can reheat them in the microwave anytime (after removing foil of course)! Talk about WINNING! You wouldn’t have to cook that night AND you have a good, nutritious meal solution for your family when you’re strapped for cash or time!

Ingredients

  • Breast meat from Pre-cooked rotisserie chicken (shredded)
  • 1 package of Knorr® Selects Four Cheese Risotto (plus 1 cup milk and 1 ½ cup water per directions on back)
  • 2 tablespoons of extra virgin olive oil
  • 1 15.25 oz sweet corn (drained)
  • 1 15.25 oz black beans (drained and rinsed)
  • Half of medium red bell pepper (diced)
  • 1 large ripe avocado (pitted and diced)
  • 1 medium tomato (diced)
  • 1 quarter of white onion (diced)
  • ½ tablespoon sea salt
  • ½ tablespoon ground black pepper
  • ¼ cup lime juice
  • 8 flour tortillas

Instructions

  1. Remove skin and shred both sides of breast of pre-cooked rotisserie chicken and set aside
  2. Cook Knorr® Selects Four Cheese Risotto (per the directions on the back of package)
  3. In a medium skillet add, extra virgin olive oil and heat over medium heat for 30 seconds to warm, then add corn, black beans and red bell peppers and sauté 5 minutes
  4. LET’S MAKE THE GUACAMOLE – Add avocado, tomato, white onion, sea salt, ground black pepper and lime juice to bowl and smash and set aside
  5. Add sautéed corn, black beans, red bell peppers and chicken to cooked Knorr® Selects Four Cheese Risotto and mix together
  6. LET’S BUILD THE BURRITOS – Add a generous portion of the Knorr® Selects Four Cheese Risotto, chicken and veggies mixture to the center of each flour tortilla, top it with guacamole and fold from the bottom, then sides and roll up to close
  7. Plate it to enjoy right away or wrap them in foil to pack for lunch … You can even freeze them once wrapped in foil to enjoy later
