Curry Salmon

Hubby and the kids gave this dish two thumbs up!  I have to admit I was also in heaven eating it.  The sauce is da bomb!  Seriously! Enjoy!!!

Ingredients

  • 4 slices of filet (no skin) salmon
  • 1 15.25 oz can sweet corn (drained)
  • 1 15.5 oz can large butter beans
  • 1 red bell pepper (diced)
  • 1/2 stick unsalted butter
  • 1 1/2 cups white wine
  • 1 teaspoon crushed garlic
  • 3/4 cup half & half cream
  • 4-5 tablespoons curry powder
  • 1/2 tablespoon sea salt
  • 1/2 tablespoon black pepper
  • 1-2 tablespoons seafood seasoning
  • 3-4 tablespoons extra virgin olive oil
  • 1/2 teaspoon granulated sugar
  • 1-1 teaspoons non-stick cooking spray

Instructions

  1. Put oven on 400 degrees
  2. Rinse salmon, pat dry and slice into serving of 4 pieces
  3. Add extra virgin olive oil to large skillet and turn heat to medium high
  4. Rub salmon with extra virgin olive oil on both sides and season both sides with sea salt, black pepper and seafood seasoning
  5. Add salmon to large skillet once skillet and oil is hot, sear on each side 3-4 minutes
  6. Spray a baking dish with non-stick cooking spray and place salmon baking dish then in oven uncovered for 8-10 minutes
  7. In same skillet salmon was in over medium heat, add unsalted butter and allow to melt, then add white wine and turn your heat to high so the wine can reduce about 3-5 minutes, then turn heat back down to medium and add in garlic, then cream and curry powder, whisking each time you add something, simmer 3-5 minutes
  8. Once Salmon is done, drizzle sauce over salmon
  9. LET'S MAKE THE SUCCOTASH - add extra virgin olive oil to a new large skillet over medium heat, add succotash mixture with sea salt,  black pepper and granulated sugar and allow to saute 5-8 minutes
  10. Once Succotash is done, add to curry sauce and gently fold together until succotash is coated in curry sauce
  11. Time to plate ... spoon out as much succotash as your heart desires then place salmon on top and ENJOY!
