 RADICAL RASPBERRY CHOCOLATE BROWNIE FOR THE RADICAL WOMAN IN YOU

BROWNIE INGREDIENTS:

4 oz. semi-sweet chocolate
4 oz. milk chocolate
2 sticks unsalted butter
2 tbsp. vegetable oil
1 ½ cups dark brown sugar
4 large eggs
1 cup all-purpose flour
1 tsp. sea salt
½ cup unsweetened cocoa powder

RASPBERRY FILLING INGREDIENTS:

1 cups of fresh raspberries
3/4 cup water
2 tbsp. corn starch + 1 ½ tbsp. water
¾ cup granulated sugar
1 tbsp. lemon juice

SOUR CREAM CHOCOLATE FROSTING INGREDIENTS:

1 10 oz. bag semisweet chocolate
1 stick unsalted butter, room temperature
8 oz. container sour cream
3 ½ cups powdered sugar

READY, SET, GO:

1. Pre-heat oven to 350 degrees
2. LET’S MAKE THE RASPBERRY FILLING – in medium sauce pan, add raspberries, water, and granulated sugar, bring to a boil over high heat, add cornstarch mixture and then turn heat down to medium and allow to cook uncovered for 10-15 minutes, then remove from heat and set aside to completely cool
3. LET’S MAKE THE BROWNIE – Add the chocolate, vegetable oil and butter in a bowl of a double boiler set over a pan of simmering water, and stir until chocolate, oil and butter are completely melted, remove from heat and allow to cool 5 minutes, then add brown sugar and eggs (one by one) and stir until fully incorporated
4. Fold in all-purpose flour, sea salt and cocoa powder
5. Pour brownie mixture in a parchment paper lined baking pan, pour the raspberry filling on top and bake uncovered for 25-30 minutes, remove from oven and completely cool before frosting
6. LET’S MAKE THE CHOCOLATE SOUR CREAM and BUTTER CREAM FROSTING – Add the chocolate and butter in a bowl of a double boiler set over a pan of simmering water, and stir until chocolate and butter are completely melted, remove from heat and allow to completely cool
7. Once frosting is cooled fold in sour cream and powdered sugar and whisk until smooth
8. ENJOY!!!!!!!!!!!
