Good Carb Baked Sweet Potato Planning

My favorite good carb is sweet potato!  OK, so hubby and I were looking to lose a few pounds.  We knew we had to eat less bread.  That honey was going to be HARD!!  But when I found out sweet potatoes are good carbs I was like OH YES!  Now I have no issue reducing my bread intake if I can have sweet potatoes in my life!  Hence this post!  Planning (cooking in bulk ahead of time) allows me to eat one whenever I want without having to cook them each time.  I plan no less than 10 and up to 20 sweet potatoes at a time.  I have my entire family eating them.  There are many ways to cook sweet potatoes but this simple easy baking recipe is my favorite ~ it’s so freakin yummy and so freakin easy to make!  I love it when eating healthy feels this good!

10-12 medium sized sweet potatoes
2-3 tbsp. extra virgin olive or canola oil
1 tsp. unsalted butter per sweet potato
¼ tsp. cinnamon per sweet potato
2 tsp. honey per sweet potato


  1. Pre-heat oven to 400 degrees
  2. Clean Sweet potato, pat dry and use a fork and lightly poke holes (careful not to poke your hand) all around the sweet potatoes
  3. Rub sweet potatoes with oil and place on baking pan (I lined mine with foil for easy clean up), bake 40 – 45 minutes or until sweet potato is bubbling where you poked the holes
  4. Remove from oven and very carefully slice open the sweet potatoes down the top/middle (but do not cut in half), add butter, cinnamon and honey to each sweet potato and use a fork or spoon to mix into sweet potato
  5. If you are eating/serving now, enjoy – to eat/serve throughout your week, allow sweet potatoes to fully cool and place in tupperware – when ready to eat/serve heat in the microwave – these good carbs can be eaten for breakfast, lunch, dinner or any snack time in between
