These grilled turkey sausage, egg white, tomato, pesto and mozzarella sandwiches are the perfect New Years Day Brunch. They are simply delicious! You “could” just cook some eggs, bacon and toast and serve it up on a plate but WHY when you can glam it up with these beautiful sandwiches?!?! Add a colorful and fresh fruit salad and some mimosas and BAM POW KABOOM you have the perfect New Years Day Brunch! Honestly these were so good I won’t wait til New Years to make em’ they will be a breakfast staple in our home!!
GRILLED TURKEY SAUSAGE, EGG WHITES, TOMATO, PESTO AND MOZZARELLA
INGREDIENTS:
10 –12 Johnsonville Fully Cooked Breakfast Turkey Sausage Links
6-8 slices of tomato
6-8 thin slices of mozzarella
6 egg whites
1-2 tbsp. prepared pesto per sandwich
2 tsp unsalted softened butter per sandwich (plus 1-2 tsp unsalted butter for egg whites)
6 slices of bread (I used Tuscan bread)
READY, SET GO:
- Pre-heat an indoor grill pan and a medium skillet over medium heat
- Add Johnsonville sausage to skillet, cover and allow to cook 8-10 minutes or until browned, remove sausage to a plate to rest
- Clean skillet and add butter, allow butter to melt, add egg whites, allow to cook 1-2 minutes or until firm then set aside
- After Johnsonville sausages have rested, slice in half so they can lay flat on the sandwich
- Butter the outsides of both the top and bottom of all bread, add pesto, Johnsonville sausage, egg whites, tomato, and mozzarella, and before closing sandwich add more pesto to the bread you are going to top the sandwich with and close sandwich with pesto side down
- Add sandwiches to grill pan, using a heavy pan press down on sandwich as it grills (or you can use a Panini maker), allow to grill 2-3 minutes or until bread is golden brown, flip and repeat for the other side
- ENJOY, ENJOY and one more ENJOY
