Talk about healthy and delicious! Easy to make and addictive to boot!
Citrus Arugula Salad with Sautéed Shrimp
INGREDIENTS:
6-8 cups of baby arugula
1 ½ cups sliced and halved fennel (the bulb not the stem)
¼ cup fresh chopped cilantro
¼ cup chopped green/spring onion
3-4 Sliced and halved seedless navel oranges
¼ – ½ cup of Sweet Vidalia Onion dressing (it comes yellow and white, I used white)
1-2 pound bag of pre-cooked divined shrimp
4-6 tbsp. extra virgin olive oil
3-4 slithers of unsalted butter
¼ cup chicken broth/stock
Sea salt (to taste)
Ground Pepper (to taste)
Old Bay seasoning (to taste)
READY, SET GO:
- Wash and pull tail from shrimp
- Add olive oil and butter to skillet and turn heat to high
- After oil and butter are hot, turn heat to medium and add shrimp
- Season shrimp with sea salt, ground pepper and old bay seasoning
- Cover shrimp and allow to cook on medium for 3-5 minutes
- Wash the Arugula
- Peel, thinly slice and half oranges
- Cut stem(s) from fennel and thinly slice and half fennel
- Chop green onion and cilantro
- Add green onion, fennel, cilantro and oranges to the arugula and drizzle Sweet Vidalia Onion dressing over the salad
- Fold very gently
- Remove shrimp from skillet with strainer to drain liquid and place in separate bowl
- SERVE WITH OR WITHOUT SHRIMP ON TOP – IT IS OH SO DELICIOUS EITHER WAY!!

All of your recipes I have tried have been AMAZING! Keep ’em coming! I don’t see the written directions for the Citrus Arugula Shrimp Salad…can you direct me to the right place? Maybe I overlooked it.
