Kale Caesar Salad

I don’t have an issue eating healthy as long as it taste good!  This Kale Caesar Salad is addictive!  The homemade garlic herb croutons and garlic caesar dressing might just make you eat a salad every day of the week!  Hope you enjoy!  And SHARE the Kale Caesar love!

KALE CHICKEN CAESAR SALAD

INGREDIENTS:

SALAD:
2 cups chopped kale
2 cups chopped romaine lettuce
2 cups chopped chicken
½ cup sliced grape tomatoes
¼ cup shredded parmesan cheese
¼ cup lemon juice

CAESAR DRESSING:
1 tablespoon crushed garlic
2 tablespoons Dijon mustard
1 teaspoon anchovy paste
¼ cup apple cider vinegar
¾ cup Hellman’s Mayo
½ cup extra virgin olive oil
½ cup grated parmesan cheese
½ cup lemon juice
1-2 tablespoons ground black pepper
1-2 tablespoons sea salt

CROUTONS:
1 cup chopped sour dough bread
½ cup melted unsalted butter
1 tablespoon sea salt
½ tablespoon ground black pepper
2-3 tablespoons Italian seasoning
2-3 tablespoons extra virgin olive oil

READY, SET, GO:

1. Add to large bowl kale, romaine, chicken, tomatoes, parmesan cheese, and lemon juice, set aside
2. LET’S MAKE THE CROUTONS: in medium bowl add croutons, melted butter, sea salt, ground black pepper and Italian seasoning, fold together
3. Heat extra virgin olive oil in a sauté pan over medium heat, add croutons and sear until crispy
4. LET’S MAKE THE CAESAR DRESSING: in small bowl add mayo, crushed garlic, Dijon mustard, anchovy paste, apple cider vinegar, olive oil, grated parmesan cheese, lemon juice, black pepper and sea salt, whisk until fully incorporated
5. Pour Caesar dressing on salad and toss, top with croutons, ENJOY
