WOW, this breakfast is light but oh so filling. And of course it tastes AWESOME!! I was tired one morning and didn’t want to do the whole bacon, egg, grits and toast thing! So I decided on a 2 item breakfast. I went for eggs sunny side up because well that’s one of my favorite ways to eat eggs (next to scrambled soft with American cheese)! I then choose a strawberry & banana smoothie to compliment the eggs but to also help to fill my belly. Fruit smoothies as you know can be made with any kind of fruit. I like the strawberry & banana for the sweet taste as well as all the vitamins from the strawberries (like Vitamin C, B2, B5, B6, K, etc.) and the iron boost the bananas give my energy level!! I also choose strawberry Greek yogurt for the creamy texture and more sweetness to add to the taste!! Hope you enjoy this breakfast as much as my family and I did!! Have FUN!!

I am light but filling – healthy but tasty – I am Strawberry & Banana Smoothie & Eggs Sunny Side Up!
Strawberry & Banana Smoothie
INGREDIENTS:
2 cups or 1 14 oz. bag of frozen strawberries and bananas
½ cup or 1 6 oz. container of strawberry Greek yogurt (I use Chobani)
1 ½ cup or 1 12 oz. can of apple juice frozen concentrate
1 fresh strawberry for garnish (optional)
READY, SET, GO:
- Add all ingredients to blender, cover and mix until smoothie is a creamy consistency
- Slightly cut fresh strawberry and add to rim of glass as garnish (optional)
- Serve and enjoy
Eggs Sunny Side Up
INGREDIENTS:
2 large eggs
2-3 slithers of butter
sea salt (to taste – optional)
ground pepper (to taste – optional)
READY, SET, GO:
- Melt unsalted butter in small frying pan
- Gently crack eggs open over the pan, make sure you keep yolks together and you do not drop any shells in the pan
- Cook for about 5 minutes or until white part sets (yolk will still be loose but in tack)
- Add a little sea salt and ground pepper to taste (optional)
- Serve and enjoy
** double, triple or whatever the ingredients you need to yield more servings
