When trying to come up with a name for this killer sweet potato danish, all I could think about is next level. Then I thought about how my Mom used to say … “The way to a man’s heart is through his tummy”! Well honey if there is any truth to that statement this sweet potato danish will surely make him pop the question! BAM!~ oh and did I mention the French Vanilla Creamer?!? all I am going to say is creamy good to the last drop flavor ~ took my danish over the top and beyond – flavoristic even!!

MAKE HIM POP THE QUESTION SWEET POTATO DANISH
INGREDIENTS:
2 roll out frozen pie crusts
2-4 cups of water
4 medium sweet potatoes
¾ cup International Delight French Vanilla Creamer
2 beaten eggs
1 cup granulated sugar
1 tsp. cinnamon
½ tsp. nutmeg
4 tbsp. softened butter
Clear Glaze:
¾ cup water
1 cup granulated sugar
Clear Glaze:
½ cup confectioners sugar
2 tbsp. water
READY, SET GO:
- Set oven to 400 degrees
- On stovetop add water and sweet potatoes to large pot and boil on high heat 15-20 minutes or until you can easily stick a fork in them
- Drain water from sweet potatoes and carefully remove skin from sweet potatoes
- In a large bowl, mix the sweet potatoes, International Delight French Vanilla Creamer, eggs, granulated sugar, cinnamon, nutmeg and butter until incorporated
- Roll out pie crust on parchment paper, cut ½ inch slits on each side of the pie crust leaving a section in the middle to lay the sweet potato mixture
- Spoon sweet potato mixture onto middle of pie crust and fold over cuts of pie crust one on each side at a time to create a breaded look and fold top and bottom edges up to close, see picture above
- To make the egg wash, beat egg with water, then brush crust with egg wash and place in oven to bake for 25-30 minutes or until crust is golden brown
- To make the clear glaze, bring water and granulated sugar to a boil in small sauce pan, constantly whisking, once boiling turn heat off and set aside
- To make sugar glaze, add confectioners sugar and water to a bowl and whisk until creamy’
- When sweet potato Danish is removed from the oven, brush with clear glaze then drizzle sugar glaze on top
