Ingredients

  • 4 thin slices of boneless skinless chicken breasts
  • Chicken Brine (2 1/2 cups water + 1/4 cup paprika, 1/4 cup onion powder, 2 tbsp Lawry's seasoned salt and 1 tbsp black pepper)
  • Wet Dredge (3 beaten eggs + 1-2 tbsp hot sauce)
  • Dry Dredge (1 1/2 cup all-purpose flour, 1/3 cup cornstarch, 1/4 cup paprika, 1/4 cup onion powder, 2 tbsp Lawry's seasoned salt and 1 tbsp black pepper)
  • 2-3 cups vegetable oil (fill pot quarter the way up - just enough to cover the chicken (never fill oil for frying to the rim of any pot)
  • 1-2 tbsp cilantro or parsley (optional for garnish)
  • 1 stick melted unsalted butter
  • 2-3 tbsp hot sauce
  • 1/3 cup honey

Instructions

  1. Rise boneless skinless chicken breast with warm water
  2. Add boneless skinless chicken breast to the chicken brine, cover and put in fridge minimum of 30 minutes (I let mine brine for 24 hours)
  3. Heat vegetable oil in medium pot over medium to high heat (don't let get too hot, 350 - 375 degrees is best)
  4. Add boneless skinless chicken breast to wet dredge, then coat with dry dredge (making sure covering chicken completely on both sides with dry dredge)
  5. Use tongs to slowly add coated boneless skinless chicken breast to the hot oil in the pot
  6. Allow to cook 6-8 minutes (until golden brown) on each side (watch it), flip it every 6-8 minutes, remove from oil, place on wire rack, baking sheet or plate so the oil can drain and set aside
  7. LET'S MAKE THE HOT HONEY BUTTER DRIZZLE
  8. Add the melted unsalted butter, hot sauce and honey to small sauce pot, whisk 3-4 minutes (you are only whisking and warming it)
  9. DRIZZLE as much or as little hot honey butter drizzle as you love over your fried boneless skinless chicken breast
  10. Sprinkle with cilantro or parsley (optional as garnish)
  11. ENJOY, ENJOY, INDULGE AND BE HAPPY!
