This Montreal Salmon and Chipotle Rice is one of those delicious meals I could eat all day long!  So Salmon is by far one of my most favorite things to eat and I’ve always loved Chipotle’s rice.  I was in the line at Chipotle one day and the guy was making a fresh batch of rice.  I watched him closely as he tossed in cilantro (one of my favorite herbs), salt, pepper and lemon and lime juice!  And just like a food blogger I went straight home and made it!  Food this good should not be this easy to make but it really is that simple!  Share this dish with your loved ones, they will thank you, trust me!

Montreal Salmon and Chipolte Rice | ShesGotFlavor
MONTREAL SALMON & CHIPOTLE RICE

INGREDIENTS:
4-6 4 ounce portions of salmon
1 cup uncooked Basmati rice
1 ¾ Water
1 tablespoon unsalted butter
¼ cup fresh cilantro, diced
1 tablespoon lemon juice
½ tablespoon lime juice
2-3 teaspoons sea salt
1-2 teaspoons ground black pepper
1 teaspoon Montreal steak seasoning per salmon portion
4 tablespoons extra virgin olive oil
Lemon slice (optional)

READY, SET GO:

  1. Pour 2 tablespoons of lime juice over salmon and season with Montreal steak seasoning and allow to marinade for minimum of 30 minutes
  2. Pre-heat skillet over high heat with 2 tablespoons extra virgin olive oil, add salmon and cook on high for 2-3 minutes on each side
  3. Soak rice in water for 20 minutes, bring rice and water to a boil, turn heat down to medium, cover and cook for 15 minutes or until liquid is absorbed, add lemon and lime juice, cilantro, unsalted butter, sea salt, ground black pepper and stir to incorporate, serve salmon over rice with a fresh lemon slice
