I went to a restaurant in Seattle and had the roasted cauliflower with a cheese sauce and it was delicious. So being the foodie that I am, I went home and tried it. OMG it is sooo delicious! The cheddar beer sauce really sets it off! Try it for yourself!
OVEN ROASTED CAULIFLOWER WITH CHEDDAR BEER SAUCE
CAULIFLOWER INGREDIENTS:
1 large head Cauliflower (cut into quarters)
2 quarts of water
3 tablespoons sea salt
1/3 cup extra virgin olive oil
¼ cup lemon juice
3 teaspoons crushed garlic
2 tablespoons dried thyme
SAUCE INGREDIENTS:
½ stick unsalted butter
3 tablespoons all-purpose flour
½ cup half and half
½ cup beer
2 teaspoons soy sauce
1 tablespoon Dijon mustard
1 teaspoon sea salt
2 cups mild cheddar cheese, shredded
READ, SET, GO:
- Preheat oven to 400
- In a bowl add the extra virgin olive oil, lemon juice, crushed garlic and dried thyme, stir to create the lemon garlic mixture, set aside
- In a large pot, add water and sea salt and bring to a boil, once boiling add cauliflower top down in water and allow to boil 5-8 minutes
- Remove cauliflower from water and place on lined baking pan, brush with lemon garlic mixture and put in oven uncovered to roast for 25-30 minutes
- LET’S MAKE THE SAUCE – in a medium pot melt the butter, add flour and stir, pour in half and half, beer, soy sauce, sea salt, Dijon mustard and cheddar cheese, stir until melted … top roasted cauliflower with sauce and ENJOY
