I went to a restaurant in Seattle and had the roasted cauliflower with a cheese sauce and it was delicious.  So being the foodie that I am, I went home and tried it. OMG it is sooo delicious!  The cheddar beer sauce really sets it off!  Try it for yourself!

Oven Roasted Cauliflower with Beer Cheddar Sauce | ShesGotFlavorOVEN ROASTED CAULIFLOWER WITH CHEDDAR BEER SAUCE

CAULIFLOWER INGREDIENTS:
1 large head Cauliflower (cut into quarters)
2 quarts of water
3 tablespoons sea salt
1/3 cup extra virgin olive oil
¼ cup lemon juice
3 teaspoons crushed garlic
2 tablespoons dried thyme

SAUCE INGREDIENTS:
½ stick unsalted butter
3 tablespoons all-purpose flour
½ cup half and half
½ cup beer
2 teaspoons soy sauce
1 tablespoon Dijon mustard
1 teaspoon sea salt
2 cups mild cheddar cheese, shredded

READ, SET, GO:

  1. Preheat oven to 400
  2. In a bowl add the extra virgin olive oil, lemon juice, crushed garlic and dried thyme, stir to create the lemon garlic mixture, set aside
  3. In a large pot, add water and sea salt and bring to a boil, once boiling add cauliflower top down in water and allow to boil 5-8 minutes
  4. Remove cauliflower from water and place on lined baking pan, brush with lemon garlic mixture and put in oven uncovered to roast for 25-30 minutes
  5. LET’S MAKE THE SAUCE – in a medium pot melt the butter, add flour and stir, pour in half and half, beer, soy sauce, sea salt, Dijon mustard and cheddar cheese, stir until melted … top roasted cauliflower with sauce and ENJOY
