Pastelon and Coconut Rice (Puerto Rican Lasagna)

I was born in NYC, Spanish Harlem and I was surrounded by delicious foods of all cultures.  One that stood out was Puerto Rican dishes, I love Puerto Rican recipes, they pack soo much freakin flavor!  Who would have thought of using sweet plantains instead of pasta!  And the Sofrita just takes it over the top!  For the written recipe for this beautiful dish, check out my Pastelon & Coconut Rice post.

I made the Pastelon and Coconut Rice on Monday night. My family raved over it! The sweetness (and unique nature) of using plantains instead of noodles was a welcomed changed from the “same old, same old” lasagna. And the coconut rice was soooooo good, and a great side. I also made the cabbage/collards/kale greens as my veggie, and the meal was a great bit HIT!
