Don’t ask me why I decided to make chicken meatballs with mumbo sauce, just know that it was a serious home run!  One day I really wasn’t in the mood to cook; I didn’t want to be in the kitchen long.  We thought about ordering out but couldn’t decide on a restaurant.  So I just decided I’d grab whatever I could pull together quickly!  Well honey we were all happy I did!  Because the meatballs were already cooked they didn’t take long, the homemade mumbo sauce was super easy and fast and the linguini was done in a snap.  But the best part of this dish wasn’t just how fast I was able to pull it together; it was the TASTE!  OH MY this was so delicious!  The kids thanked me and hubby well he just planted a huge kiss on my cheek and me, well I gave myself a pat on the back LOL … really I did!  If you are looking for a quick meal that will taste delicious and satisfy everyone, this is it!

QUICK AND EASY CHICKEN MEATBALLS WITH HOMEMADE MUMBO SAUCE

INGREDIENTS:
Precooked Chicken Meatballs (I used Aidells Teriyaki & Pineapple)
1 box/package of thin linguini (or you can use thin spaghetti)
2 tablespoon extra virgin olive oil
1-2 teaspoons sea salt
2-3 teaspoons granulated garlic
1 cup ketchup
¼ cup white vinegar
½ cup granulated sugar
¼ cup brown sugar
¼ cup soy sauce

READY, SET, GO:

  1. Cook linguini per package instructions, after linguini is drained. add extra virgin olive oil, granulated garlic and sea salt, toss together and set linguini aside
  2. In large skillet over medium heat add ketchup, white vinegar, granulated sugar, brown sugar and soy sauce, whisk together and allow to cook uncovered for 5-7 minutes until slightly bubbly
  3. Add chicken meatballs to sauce and cover, allow to cook for 5-7 minutes
  4. Serve chicken meatballs and mumbo sauce over linguini and ENJOY
