Having family over for the Holidays and want a fun, delicious meal everyone will love the day before or the day after Christmas?  Make it a pizza night and change it up a bit! Try this Sausage & Pepperoni Pizza Casserole, it is DELISH!  My children loved it!  I used Johnsonville Mild Sausage because … well I love their sausage (they also have a spicy option for you spice enthusiasts out there).  I even used egg noodles to decrease the carbs!  This is also a nice dish to have for left overs the day after or freeze for a nice treat the following week.  Try it for yourself, you and your family will be happy you did!

SAUSAGE & PEPPERONI PIZZA CASSEROLE

INGREDIENTS:
10 Johnsonville Mild (or Spicy) Sausage Links
15 slices of pepperoni
1 24 ounce jar of marinara
½ cup baby bella mushrooms diced
½ cup Vidalia onion, diced
½ cup roasted red peppers, diced
12-14 ounces wide egg noodles
4 cups water
1 tablespoon canola oil
2 cups mozzarella cheese, shredded
1 tablespoon extra-virgin olive oil
sea salt, 2 teaspoons for meat mixture, 1 teaspoon for pasta
garlic powder, 2 teaspoons for meat mixture, 1 teaspoon for pasta
ground black pepper, 2 teaspoons for meat mixture
Italian seasoning, 2 teaspoons for meat mixture

READY, SET GO:

  1. Pre-heat oven to 350 degrees
  2. Add extra virgin olive oil to large skillet over medium heat, add mushrooms, onions and roasted red peppers, allow to sauté for 2-3 minutes, add Johnsonville sausage, sea salt, black pepper and Italian seasoning and allow to cook 8-10 minutes or until browned (stirring occasionally), drain in colander, add back to skillet, add marinara sauce and allow to cook an additional 1-2 minutes to create meat mixture, set aside
  3. In large sauce pan, add 4 cups of water, sea salt and canola oil, bring to boil then add in egg noodles, allow to cook until al dente, drain, season with sea salt and garlic powder, set aside
  4. Add one layer of egg noodles, one layer of meat mixture and one layer of cheese to 9 x 13 inch baking dish
  5. Repeat step 4,top with pepperoni, bake uncovered 25-30 minutes or until pepperoni is crisp on the edges and cheese is bubbly
