So Grateful to be a Mother – The Year of Little with Olivari Olive Oil

With the hustle of life and all that it encompasses, how often to you take a moment and just breathe in the blessings stowed upon you? Olivari Olive Oil came up with a new campaign that totally impressed me! They didn’t want anyone to focus on Olivari Olive Oil, they wanted you to take a moment and focus on self. Olivari Olive Oil, wants you to think of the little things in your life that changed you, that made you happy! Maybe even things that made you cry but changed you for the better.

Before I gave birth to my first child, I recall a special prayer I’d say. “Lord before I die, please allow me to become a Mother”! I remember that prayer so vividly in my mind. So for me my Year of Little, those magical moments that changed my life forever were when I gave birth to my son and daughter. I know Mothers around the world can attest being a Mother is not an easy job but it is a job I would not trade for anything in the world! Everyday that passes I am amazed at my children and how they grow, the babies who become toddlers and toddlers who become little people and little people who will eventually become teenagers, then adults and one day be Mothers and Fathers themselves!

I also want to highlight and give a very special Year of Little shout out to Mothers and Fathers out there who have adopted. I am a product of that special unconditional love when a person takes you in, molds you, loves you and supports you just because! I was raised by my Grandmother’s sister, but to me she is and will always be my “Mama”! It takes a special person adopt! I applaud you, you are a part of my Year of Little!

I can’t leave without telling you how much I loved using Olivari Olive Oil, I know this is about the Year in Little BUT I have to give them the love they deserve! I really loved the smooth light taste of the Olivari Extra Virgin Olive Oil! AND to my delight and surprise when I opened the cap a pop-up spout popped up, so no more over pouring of my olive oil – then I just put the cap back on and the spout goes back in and ready to pop back out when you use it again, this was GREAT! USE OLIVARI EXTRA VIRGIN OLIVE OIL TO MAKE GRILLED SCALLOP
SPINACH SALAD WITH SWEET LEMON VINAIGRETTE DRESSING

Scallop Salad with Lemon Vinaigrette Dressing

MOUTH WATERING GRILLED SCALLOP SPINACH SALAD WITH SWEET LEMON VINAIGRETTE DRESSING

GRILLED SCALLOP SPINACH SALAD INGREDIENTS:
6-8 Scallops
1 cup of fresh baby spinach
6-8 tsp. extra virgin olive oil (to toss with scallops)
1-2 tsp. extra virgin olive oil (to heat in the pan)
Sea salt (to taste)
Ground black pepper (to taste)
Dried thyme (to taste)

SWEET LEMON VINAIGRETTE DRESSING INGREDIENTS:
Juice of ½ a lemon
3 tbsp. red wine vinegar
3 tsp. of country Dijon mustard
zest of ½ a lemon
3 tbsp. granulated sugar
Sea salt (to taste)
Ground black pepper to taste
¼ cup extra virgin olive oil

READY, SET GO:

  1. Rinse your scallops
  2. Gently toss your scallops in a bowl with the 6-8 tbsp. extra virgin olive oil, sea salt, ground black pepper and thyme and set aside
  3. Pull out your grill pan and add 1-2 tsp. extra virgin olive oil and turn the heat to high to get your grill pan hot
  4. Once your grill pan is hot, turn the heat down to medium and then add your scallops to the grill pan and allow scallops to grill for about 2-3 minutes on each side, turning your scallops 2-3 times until you have nice grill marks and your scallops are cooked through
  5. Allow your scallops to rest 2-3 minutes after the are done
  6. Add your baby spinach to your plate and top it with your grilled scallops

LET’S MAKE THE SWEET LEMON VINAIGRETTE DRESSING

  1. Combine the lemon juice, red wine vinegar, country Dijon mustard, lemon zest, granulated sugar, sea salt, and ground black pepper in a bowl and vigorously whisk together until well incorporated
  2. Slowly add ¼ cup of extra virgin olive oil while whisking at the same time until smooth
  3. Drizzle sweet lemon vinaigrette dress over grilled scallops and baby spinach
