So after you make your loved one a Romantic Steak Dinner, you of course make dessert!! You take a Moist Strawberry Cake with Cream Cheese Icing and Fresh Strawberries and prepare it for your significant other for Valentines Day and watch the melt down! This cake will surely hit the Valentine Day jackpot! First let’s talk about the thought, because really the thought does count, so the fact that you are taking your precious time to bake something sweet for your sweetie already put you ahead of the game. But when they take a bite of this strawberry love feast, you will be let’s just say on the good side of things for a long time! And come on, it starts with a boxed cake mix, the rest is easy ~ certainly worth the effort for your honey, right?!!?!

STRAWBERRY LOVERS VALENTINE DELIGHT
STRAWBERRY CAKE INGREDIENTS:
1 Box of Strawberry Cake Mix + ingredients listed on back of box + 1 2.9 oz. box of strawberry Jello (the powder, do not make the jello)
2 tsp. unsalted butter (to butter the pan)
2 tsp. all-purpose flour (to flour the pan)
Fresh strawberries to garnish to of each slice of cake
STRAWBERRY TOPPING INGREDIENTS:
2 cups Strawberries (cleaned and diced)
1 cup granulated sugar
2 cups water
1 tbsp. corn starch + 2 tbsp. water (mixed together)
CREAM CHEESE ICING:
1 stick unsalted butter
1 8 oz. package cream cheese
2 cups confectioner (powdered) sugar
2 tsp. vanilla extract
READY, SET GO:
- Preheat oven to 350
- LET’S MAKE THE STRAWBERRY TOPPING ~ Add diced strawberries to boiling water, turn heat to medium and allow to cook 2-4 minutes
- Add sugar and corn starch mixture and stir – allow to cook an additional 3-4 minutes then set aside
- LET’S MAKE THE CAKE ~ Whisk together ingredients from box instructions + plus add powder from strawberry jello
- Lightly butter and flour 13×9 inch rectangle baking pan and add cake mixture, bake for 34 – 40 minutes
- LET’S MAKE THE CREAM CHEESE ICING ~ While cake is baking add butter, cream cheese, confectioner sugar, and vanilla to mixer and mix until smooth and set aside
- When cake is done remove from oven and while hot poke holes all over top of cake with a fork, then pour the Strawberry Topping all over the cake, set aside and allow to completely cool
- Once the cake is completely cooled, spread cream cheese icing on top
- Add fresh strawberries to top of each slice, ENJOY, ENJOY, ENJOY.

I love all things Strawberries & Cream (real whipped cream that is), this cake looks divine. Shall be tried out in my kitchen before long !! Probably for my Footloose & Fancy Free Valentine’s Night during the view of some real lovely Valentine Movies like Love Potion No. 9; Only You (1994); the Original Love Letter (1996) and Simply Irressistible !!! One thing is for sure, I shall enjoy the Strawberries and the Kir Royal as well on Valentine’s Day.

Just want to check before making …..the instructions for the topping call out “Add sugar and corn starch mixture and stir” but the ingredients for the topping don’t call for the amount of sugar? So how much sugar should be used in the topping?

I just made this cake with raspberries instead of strawberries for the topping and subbed raspberry extract for vanilla in the icing. It turned out absolutely divine!!! I had just a bit of difficulty icing the cake. Are you supposed to wait until all of the topping seeps through before you ice it? There was still a thin layer of topping on the top, so the icing wouldn’t spread, it just slid around on top. I wondered if my topping was too thin or I didn’t poke big enough holes in the cake or if I had waited longer, all of the topping would have sunk in. Regardless, it was absolutely PERFECT!!! So yummy to have a berry dessert in anticipation of spring! Thank you very much! Jolene in MN

This is so delicious. However, I didn’t have time to make the icing so I used cool whip, topped with sliced fresh strawberries and OMG somebody roll me over. Just delicious!

The topping mixture. Should the water evaporate before topping the cake? What should the consistency be?
Hi Chanel, I am not sure what you are asking about the water, it should not evaporate totally but mostly … the consistency should be a little thick but easy to spread, if your mixture isn’t thick enough you can always add a corn starch mixture (1 tbsp. corn starch + 1/2 tbsp. water) to thicken it a bit
