My first encounter with Sweet Potato Chips and Garlic Aioli Dip was during my first video shoot with Reynolds while competing to be one of five Reynolds Real Mom™! I don’t think I will ever forget that moment! The video shoot was catered and the caterer cooked many of our snacks right on site, including deep fried Sweet Potato Chips with Garlic Aioli Dip! OMG ~ I don’t think I can describe the euphoric feeling I experienced when I ate those sweet potato chips and dip!! All I remember was running to find her so I could get more!! YES, it WAS that melt in my mouth good!! I said right there on the spot, I WILL make these when I get home and I WILL post them to my blog!! I just had to share with you, I just had to! To lay off the grease, I baked mine instead of deep frying and I added some dried herbs to intensify the phenomenal flavor!
My 10 yr. old daughter who is a natural creative artist helped me come up with a cute idea for serving. She took my idea of serving the chips in a funnel made out of Reynolds® Parchment Paper to the next level. Before forming the funnel, she colored the Reynolds® Parchment Paper, this made the funnel so festive, and I loved it! These sweet potato bites of heaven are the perfect snack for guest during a cookout or picnic while waiting for the main course! PLUS the flavor will have your guests drooling over your cooking skills!!
JUST SLICING UP SOME SWEET POTATO CHIPS
A FESTIVE PRESENTATION FOR THE PERFECT PARTY IN YOUR MOUTH! SWEET POTATO CHIPS WITH GARLIC AIOLI DIPPING LOVE
SWEET POTATO CHIPS INGREDIENTS (makes 2-3 funnels of chips):
2 medium sized sweet potatoes thinly sliced
1 egg white
1-2 tsp. dried cilantro
1-2 tsp. oregano
1-2 tsp. sea salt
Reynolds® Parchment Paper
Baking Pan
Large bowl
GARLIC AIOLI DIP INGREDIENTS:
½ cup mayo
1-2 tsp. dried cilantro
½ tsp. crushed garlic
Juice of ½ lemon
1-2 tsp. apple cider vinegar
½ tsp. sea salt
Large bowl
READY, SET GO:
- Set oven to 400 degrees
- In a large bowl gently mix the egg white, dried cilantro, dried oregano and sea salt until incorporated, add sweet potato slices and toss to coat
- Line baking pan with Reynolds® Parchment Paper and add coated sweet potato slices (do not layer, give each sweet potato chip its’ own space)
- Place in oven and bake for 15 minutes, remove from oven, flip each chip over and bake another 15 minutes (keep an eye on them the last 15 minutes to ensure you do not burn)
- Turn the oven off and allow chips to sit in oven another 10-15 minutes
- LET’S MAKE THE GARLIC AIOLI DIPPING LOVE
- In a large bowl whisk the mayo, dried cilantro, crushed garlic, lemon juice, apple cider vinegar and sea salt until smooth
- Make funnels with Reynolds® Parchment Paper to serve the chips in, to make your funnel more festive get your children involved and ask them to color the Reynolds® Parchment Paper on the side that will end up on the outside of the cone (make sure you allow the paper to dry if markers are used)
